Organic Millet and Palisade Peach Cobbler a la Almond Ice Cream
Ingredients
Batter:
1 cup millet flour
2 tsp baking powder
¼ tsp salt
Tbsp unsalted butter,
6 chilled and cut into pieces
1/3 cup agave nectar
1 cup almond milk
Filling:
6 peaches sliced into wedges
1/3 cup agave nectar
¼ tsp cinnamon
1/8 tsp nutmeg
1 Tbsp lemon juice
1-2 tsp cornstarch
Peach Filling Preparation Instructions
1. Preheat oven to 375 degrees.
2. Put sliced peaches in large bowl and coat with prepared coating mix (gently stir to cover peaches).
3. Pour prepared peach filling into a greased baking dish (pie pan size).
Batter Preparation Instructions
1. Whisk together ingredients in medium sized bowl
2. Cover prepared peaches with topping mix
3. Bake in 375 degree oven for 45 to 50 minutes until bubbly, checking after 30 minutes to make sure topping doesn’t burn. Loosely place a piece of tin foil over the cobbler for the last 15 to 20 minutes to keep the top from over-browning. Keep an eye on it, don’t let it burn. Let cool for 10 to 15 minutes and serve. Top with your favorite ice cream or non-dairy ice cream. Yum!
